After opening Redfish, David met Rolita Chan through a long-term customer. Rolita was raised in Hong Kong and came to the US for higher education in 1987. After completing her MBA from the University of Houston and working for the corporate world for over 12 years, she resigned to pursue other dreams. After meeting David, she helped in operation and management of the restaurant.
The original Redfish was opened in November 2003. David and two partners, acquired the restaurant which was built and operated as a oyster bar in a boat setting. In the summer of 2007, the 2nd floor was built to accommodate more patrons. The significance of the 2nd floor was the beautiful caricature mural which was painted by one of our regular customer and Artist, Ray Shipman. The mural is a showcase and appreciateion of our regular customers.
On Januray 4, 2009, a new Redfish was opened to serve the local in the Cypress area. The new Redfish has moden decor with a beautiful aquarium designed and built by David. The new Redfish shares almost the same menu as the original one. David and Rolita, along with all the staff, take pride in serving you at both of our Redfish Seafood Grill.
